OK, not exactly "production" because this happens in some open sea but the fish department manager of one of the super-markets here in Asakusa (it's called "Sanpei/三平", incidentally) shows us where the tuna blocks at the fridge come from. Said blocks where all at half price than normal -this is what the "hangaku" (半額) sign means; in other words, a block of o-toro (大トロ) from the tuna's belly that would be good for 12 pieces of the highest quality sushi was at 1100 yen, i.e. about $10.
