It is called "inari-zushi" (いなり寿司) and it is abura-age (油揚げ) fried tofu pockets stuffed with sushi rice. This variation I saw at a super-market in Nagano and instead of rice, the abura-age were stuffed with soba noodles, one of the things Nagano is famous for. I should had tried them --next time!
