(2304) There are as many ramen recipes...

...as there are ramen restaurants. This one in Ueno, is using broiled flying fish or "ago" (飛魚) which it hangs outside to dry before putting them in its ramen. Haven't tried it yet but it's always full which is a universal good sign for quality and/or taste.
