Very polite, kind of funny and with a tie more appropriate for St. Patrick’s day: one of the waiters (or “boy-san”) in the “Macaroni Ichiba” Italian restaurant in Kanagawa’s Fujisawa. He didn’t actually wait; he just came to grate the cheese on your salad or pasta. This particular cheese resembled an oily and salty Greek kefalotyri.
