The "Heart Sutra" (Hannya Haramita Shingyo/般若波羅蜜多心経) is one of the most important Buddhist texts. The problem is that it's also very big so in many occasions the priest just recites the beginning and the end of every chapter while at the same time "fans" the accordion-like book containing it; this symbolizes the full recitation of the text.
