It’s a sponge cake but the Japanese call it “kasutera”, from the Portugese “Castela” (Castile); it was one of the first western-style deserts that came to Japan some 400 years ago. The particular one is a specialty of Nagasaki; notice the bat logo of the company, almost 200 years before you know who.
