Not all shops use them any more but the older ones, like the Chinya sukiyaki restaurant in Asakusa (in the restaurant business since 1880) they put them up every morning to show they are open and take them down every night when they close. They are the curtains called "noren" (暖簾/のれん) and the writing on them is usually the name of the shop.
